    <p>Целью данной работы являлось сравнительное исследование влияния последовательных экстракций основных частей мышечной ткани животного происхождения и процесса лиофилизации на инфракрасный и электронный спектры отражения их поверхности . Объектом исследования являлись измельченная мышечная ткань свинины и ее основные составляющие - мышечное волокно, строма и белки стромы. Представляемое исследование основано на способности составных частей мышечной ткани растворяться в «иерархической» последовательности и позволило отметить согласованность данных по изменению функционального состава используя метод ИК-НПВО спектроскопии поверхности исследуемых образцов и их компонентного состава с использованием метода электронной спектроскопии диффузного отражения (ЭСДО).</p>

    <p>The aim of this work was the comparative study of the effect of sequential extractions of the main parts of muscle tissue of animal origin and processes of lyophilization on infrared and electronic spectra of reflection of the tissue surface. The object of the study was to minced muscle tissue of pork and its main components - the muscle fiber, the stroma and the proteins of stroma. The study based on the ability of the constituent parts of muscle tissue to dissolve in a hierarchical sequence made it possible to note the consistency of the change in the functional composition using the method of ATR-FTIR spectroscopy of the samples surface and their component structure using the method of electronic spectroscopy of diffuse reflection (ESDR).</p>
